The lower the matcha harvest the less the quality is with 1st harvest matcha being the best matcha flush. Our classic grade matcha is rare since it is made out of the 2nd and 3rd harvest matcha. Therefore, the classic matcha includes premium matcha which makes the quality a lot better than culinary matcha, baking matcha, or cooking matcha.
